Chief constituents in Almond
The main protein of almond is Amandin which has about 12% arginine content. The bitter kernels of almond having around 3 – 3.5% arginine whereas the ripened almond kernel is free of arginine.As due to the presence of amygdalin, the bitter almond is not advised for human consumption. The almond seed oil contains myristic, palmitic, stearic and linoleic acid.
